What is soujouk sausage?

Sujuk sausage, also known as sujuk, sucuk, or sudjuk, is a type of dried and spicy sausage commonly found in the Middle East and Mediterranean regions, particularly in Turkey, Armenia, Lebanon, and Syria.

The sausage is made from ground beef or lamb that is mixed with spices such as garlic, cumin, and paprika, which give it a distinctive, spicy flavor. Other ingredients may include red pepper flakes, salt, and sugar. The mixture is then stuffed into a sheep or beef intestine, which is tied and then allowed to dry for several weeks.

Sujuk can be eaten as a snack on its own or used as an ingredient in various dishes. It is commonly used in breakfast dishes such as eggs and toast. It can also be added to pastas, pizza, sandwiches, and stews. Sujuk is a popular and versatile ingredient in Turkish cuisine, used in dishes such as pide, lahmacun, and menemen.
